the Ostinato Fine Ambra Secco is a dry Marsala produced from late harvest Grillo, Inzolia and Catarratto and aged for 1+ year in barrel. Since the alto grado grapes are late harvest, their high natural ABV means the wines do not need as much mosto cotto or sifone, and thus express the underlying Marsala terroir better. Enjoy with dry-cured meats and a wide variety of cheeses, including Robiola, Taleggio and Pecorino or with classic dishes like veal or chicken Marsala or Saltimbocca with sautéed mushrooms.
