Straight rye malt whiskey produced by Chattanooga Whiskey in Chattanooga, Tennessee
Mash bill of 40% non-GMO yellow dent corn from Catesa Farms in Riddleton, Tennessee, 53% pale malted rye from Canada, 6% caramel malted rye from the UK, and 1% chocolate malted rye from Germany
Temperature-controlled, open-top fermented for 7 days with a yeast strain typically used for American whiskey
Distilled in a 30-foot high, 18-plate Vendome column still and custom Vendome copper doubler
Aged in 50% char #4 and 50% char #2–3 53-gallon custom toasted oak barrels from Independent Stave Company
On the nose, malty, toasted notes enhanced with dried mint and dill combine with oak and wet stone, blossoming into a full expression of threshing room floor. Toast, rather than char, focuses a chewy palate that runs from oatmeal to pumpernickel.
Produced in small batches of 6–10 barrels
Aged a minimum 3 years; non-age statement
Non-chill filtered; 49.5% ABV
Developed in 2015 as Experimental Batch 007, this “bourbon-drinker’s rye” showcases how Chattanooga Whiskey’s Tennessee High Malt regimen translates across the spectrum of their range. This is a true rye malt whiskey (at least 51% rye malt) instead of just a high-malt rye (a rye whiskey made with a high percentage of malted barley), pleasantly familiar but compellingly different, and a showstopper in a tumbler or a tasty splurge in an Old Pal.
