100% malted barley peated with mainland peat from St. Fergus, one mile from the North Sea coast (final spirit PPM of 35)
160-hour fermentation in stainless steel washbacks
Twice distilled in copper pot stills
Aged a total of 5 years in ex-bourbon barrels followed by Pedro Ximénez and Oloroso sherry puncheons
Aromas of drip coffee, dried cherries, and praline pecans lead to a palate of candied bacon, chocolate ganache and dark cocoa, and a touch of iodine on the finish
No added coloring
Non-chill filtered; 48% ABV
