This sparkler is delicious – crisp orchard fruit and dried floral notes typical of Kisi with fine bubbles. Getting technical, For freshness Kisi was harvested early in Kvareli, on the southeastern edge of the Kakheti Valley in Georgia. The wine fermented on skins for 10 days in Qvevri using a pied de cuve. The maceration was gentle with the intent to add color, flavor and a kiss of tannin. At the appropriate brix for sparkling wine, it was bottled and sealed under crown cap. Prior to release the wine was disgorged. No additions/no subtractions.
