Anapea's new sparkling is the perfect addition to our shelves, especially with the weather making us crave some delicious juice. From the place where everything started, this is a Kisi that is macerated on its skins for around 10 days in qvevri. Fermentation starts with a pied de cuve (tiny quickstart fermentation), which is then finished in bottle. Sharp orchard fruit with lovely dried floral notes and very delicate bubbles.
