Jordi Casanovas Bohigas carries on the family tradition of producing high-quality wines from 100% estate-grown grapes since the family started its wine making roots in the 13th century. Organically farmed, indigenous varieties of Xarel-lo, Macabeo and Parellada are from their vineyards in the Anoia river valley, but further upstream at higher altitudes and cooler climates than the Penedes Cava producers. These higher elevation grapes keeps the grapes and resulting wine, fresh on the palate. The estate's underground caves are perfect for secondary fermentation and lees aging, while disgorging only happens when they receive an order from the importer.
A wonderfully fresh cava, with yeasty notes of biscuits and fresh bread. Fine, tight bubbles and a citrusy palate, lend this wine to a perfect pairing with potato chips and Jamón Ibérico.
