The Glera grapes, hand-harvested, are gently pressed, and the must ferments at controlled temperatures, followed by a second fermentation process in autoclaves according to the Charmat method. This procedure grants the Prosecco its persistent mousse and the fresh and pleasant notes that characterize it.
Visually, it presents a fine and persistent perlage, with a clear and bright straw yellow color. On the nose, the Prior enhances an aromatic range of white fruits like apple and pear, enriched with floral nuances and a subtle touch of fresh yeast.
