Bruno hand-harvests the grapes, of course, and lets them cold macerate for a few days before the wines are fermented with moderate extraction and then aged for 14-16 months in small oak barrels with a relatively small proportion of new barrels.
Very precise, expressive and classic Gevrey-Chambertin. Bruno Desaunay expresses all the characteristic notes of the appellation with dark cherries, hung meat, forest floor and earth and a rather powerful taste with nicely ripe tannins and a rather mineral and firm finish.
2021 is a cool vintage, and these are the ones Bruno is at his best in. The fruit is delicate and elegant without compromising on concentration
