The Boulay family has been in Sancerre since 1380, Gerard the current generation of the family adds no yeast and little to no SO2 during vinification. He describes his role as one of “surveillance” to make sure nothing goes wrong. In general he works by instinct, “au feeling” because he wants to “let the wine live” and tries not to interfere with the natural process. Most of his vineyard sites average about 45 years in age. While many vignerons in Sancerre continue with conventional winemaking, Gerard continues to implement organic farming and making thoughtful, traditional Sancerre in the famed village of Chavignol.
From 35-40 year old vines just next to the Boulay’s property in the village of Chavignol comes this striking Pinot Noir. The aromatics of this wine are quite remarkable, especially with a slight chill and a bit of breathing. It’s aged in 300 liter casks and makes a wonderful alternative to Premier Cru Red Burgundy.
